High Protein Taco Bowl Lunches

I’m a big fan of batch prepping satisfying lunches like Taco Bowls so that I have a simple, go-to option all week long! I will cook a recipe like this and then divvy it out into portions for the week. Simple is my north star!

Ingredients

  • 1 lb ground chicken
  • 1 packet taco seasoning I love Kirkland brand at Costco!
  • 1 cup dry brown rice Minute rice makes it quick!
  • 3 bell peppers
  • 1 onion
  • 2 jalapenos
  • Black beans optional
  • Lime juice/Lime wedges

Instructions

  • Lime juice helps a lot with flavor. Slice up a lime and add in a slice or two to each of your portions.
  • Brown 1 lb of ground chicken, season with taco seasoning according to packet
  • Cook minute brown rice on stovetop according to package directions- I did 1 cup dry rice
  • Cook fajita veggies in a pan with olive oil – I did bell peppers, onions, and jalapeños
  • Portion it out into 4-5 containers for your lunches/meals. I also added in some beans as another source of protein.
