High Proten Taco Bowl Lunches
I’m a big fan of batch prepping satisfying lunches like Taco Bowls so that I have a simple, go-to option all week long! I will cook a recipe like this and then divvy it out into portions for the week. Simple is my north star!

Ingredients
- 1 lb ground chicken
- 1 packet taco seasoning I love Kirkland brand at Costco!
- 1 cup dry brown rice Minute rice makes it quick!
- 3 bell peppers
- 1 onion
- 2 jalapenos
- Black beans optional
- Lime juice/Lime wedges
Instructions
- Brown 1 lb of ground chicken, season with taco seasoning according to packet
- Cook minute brown rice on stovetop according to package directions- I did 1 cup dry rice
- Cook fajita veggies in a pan with olive oil – I did bell peppers, onions, and jalapeños
- Portion it out into 4-5 containers for your lunches/meals. I also added in some beans as another source of protein.
- Lime juice helps a lot with flavor. Slice up a lime and add in a slice or two to each of your portions.
