Apple Cinnamon Quinoa Bowls

A high protein + high fiber simple breakfast! In the last month I tweaked what I was eating and broke my weight loss plateau, increased my tired mom energy 😅 by a LOT, and the shifts have given me the confidence to know that I’ll get to my pre-pregnancy weight in time.
Course Breakfast

Ingredients

  • 1 cup quinoa
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • Cinnamon
  • Cloves
  • Dried Ginger
  • Himalayan Salt
  • 1-2 apples diced
  • Slivered almonds
  • Almond butter

Instructions

  • Cook a batch of 1 cup of quinoa on the stovetop with water according to the directions on the package. Add some salt to the water.
  • Once quinoa is cooked, add the almond milk, vanilla extract, maple syrup, hefty sprinkle of cinnamon, light sprinkle of cloves (don’t overdo the cloves!), and 3 pinches of dried ginger, and a dash of himalayan salt
  • Bring it all to a boil, then let it cool.

Notes

Portion out your breakfast bowls:
Add 3/4 of cooked quinoa mixture to each bowl
Add diced apples
Top with slivered almonds & 1 small spoonful of almond butter
